Tasting Notes: Nose: A coastal landscape spreads out in front of you: salty sea breezes and wildflowers on sand dunes. Bright plumes of burning peat are accompanied by rosemary, grilled pineapple slices and tinned grapefruit.
Palate: Sweet smoke with poached pears, syrup and salt flakes. The addition of water washes the brine away, bringing out grass and a bouquet of midsummer flowers instead: chamomile blooms, daisies and clover.
Finish: Long, delicately smoked and slightly resinous, with hints of burnt sourdough bread, white pepper and pink grapefruit peel.
