Tasting Notes: Nose: Sand and gravel; a path leading down to the seaside, with saltwater spray and smouldering heather fires on the hillside. Lemon-lime soda, honey and white wine soften the more austere mineral qualities.
Palate: Fresh, vibrant and complex, full of tart fruits and liqourice. Lemonade, green grapes, rhubarb and custard are complemented by leafy herbs, fennel seeds and celery.
Finish: Herb gardens with rows of tarragon and sage. Slightly tropical notes of prickly pear and tangerine are doused with a generous helping of double cream.
